Small-batch · roasted to order

Coffee worth slowing down for.

We roast a short, seasonal menu of coffees in 12-kilo batches, rest them properly, and ship them within 48 hours. Nothing flashy — just careful work, repeated daily.

Blends & everyday coffees

Composed profiles we keep in balance year-round — the coffees for first cups, full pots, and late evenings.

Roasting philosophy

Roasted to the cup, not to the clock

Every batch is roasted to a profile we cup and adjust through the season, then rested before it ships. We roast light enough to keep the farm in the cup, and dark only when the coffee asks for it.

Our roasting philosophy

Single origin

Traceable lots from farms and washing stations we return to season after season. Each one roasted to its own profile.

Sourcing

Bought by score, not by weight

We pay for quality at the cupping table and go back to the same hillsides every harvest. Long relationships make better coffee — and better prices for the people who grow it.

How we source

Reserve

One exceptional lot each season, roasted in five-kilo batches. When it sells through, it's gone until next year.

Pour-over brewing: kettle pouring water into a dripper

Brewing

Good coffee is mostly patience

A scale, a steady pour, and two degrees of water temperature make a bigger difference than any gadget. Our brewing guide covers the six methods we use every day, with ratios and timings.

The Yirgacheffe made me understand what people mean by 'floral'. I've reordered every month since.

Nightfall is the first dark roast that doesn't taste burnt on my machine. Flat whites at home finally taste like the café's.
Daniel R. · Nightfall Espresso
Ordered Tuesday, roasted Wednesday, on my doorstep Friday with the roast date written on the bag. That's the whole reason I switched.
